Sometimes you just gotta use what you have and make something up. Sometimes it works out. I used some vegetables I had but chopped them small…some broccoli, cauliflower, carrots, red pepper, mushrooms and a little onion. I sauteed them in olive oil. Then after they were crisp tender, I poured a few beaten eggs over and when set, I shaved a little Manchego cheese on top. Eaten with a blueberry muffin…we had a feast!
